Osa Mystica Salad

While we can't grow the classic lettuces like iceberg, romaine, and leaf lettuce commonly seen in US grocery stores on our property, we're completely content with our unique varieties!

We discovered a delightful salad with five tasty, distinct, and nourishing leaves: moringa, cranberry hibiscus, katuk, Brazilian spinach, and water spinach.

Welcome to my first post here on Teri Lou's Osa Mystica Blog! Join me as I unfold the story of our decision to cultivate a land of abundance in Costa Rica, not just for ourselves, but for the creatures and wonderful community around us.

Over the past 14 months, we've joyfully immersed ourselves in permaculture classes, lovingly nurtured fruit trees, artfully crafted vegetable garden designs, embraced the art of composting, skillfully propagated plants from cuttings, savored exotic fruits from our trees, marveled at captivating thunderstorms, and been mesmerized by breathtaking sunsets.

During the month of July, we kickstarted our vegetable garden by seeding and replanting. We then took off for a 6-week break, leaving our garden under the caring supervision of our trusty caretakers. Our joy knew no bounds when we came back to witness the bountiful harvest and lush growth that awaited us!

Let's go back to those 5 salad leaves!

At Finca Tierra in Costa Rica, our permaculture class opened our eyes to a world of incredible salad leaves. Even Jovian, who typically avoids lettuce, couldn't resist the array of flavors and began savoring them every day. In July, post garden preparations, we returned to Finca Tierra to gather cuttings and seeds of our preferred and sometimes elusive tasty options.

We are excited to dig into these 5 scrumptious garden leaves paired with fresh cucumber, tomato, and a delightful homemade papaya salad dressing tonight!
